THIS IS THE PERFECT ORGANIC CHICKEN!
This organic chicken was baked in the oven, and then the bones were used to make broth. That was used to make next meal of HOMEMADE CHICKEN & DUMPLINGS!
Fire up the romance using our “Keeping it Hot Chicken Recipe”
Step one: Preheat oven to 350 degrees. Step two: Get your chicken ready for seasoning.
After removing wrapper and the giblets that are stored inside the chicken, rinse it off with plain water inside and out.
Pat dry with paper towels and immediately throw those towels away.
Always use food safety techniques when touching any raw poultry products to avoid any type of bacterial or Salmonella type of contamination. That includes cutting boards, knives, sink, or any other surface areas or utensils that came in contact with the raw poultry.
Step three: Season the chicken. Gather up the following ingredients:
2 smashed cloves of garlic
1 whole unpeeled orange or lemon washed and cut into four pieces.
Measuring cup containing ½ cup of orange juice.
Step four: Mix together spice rub.
1 T Paprika
1 tsp Cayenne Pepper
1 T Red pepper flakes
1 tsp Sea salt
1 tsp Lemon pepper
1 T Rosemary (fresh if you have it)
1 tsp Black pepper
Step five: Prepare the outside of the chicken:
1/4 cup the orange juice
Half the spice rub mixture
Start by using 1/4 cup the orange juice to moisten the skin of the chicken. Cover the skin in orange juice, and then rub spices into the skin.
Step six: Prepare the inside of the chicken:
Add ingredients in the following order to the inside cavity of the chicken if you are using the roasting pan.
1/4 cup of the orange juice
Half the spice rub mixture
2 cloves of smashed garlic
A whole orange or lemon cut into quarters
If you are using the beer can method add these ingredients to the special reservoir that allows the ingredient to vaporize into the inside and cook through from inside out.
Recommend cooking chicken for one hour 15 minutes at 350 degrees.
Chicken is done when a knife is inserted into the thickest part of the breast and juice comes out clear and not bloody. Use a thermometer in the same area to cook to a temperature of 160 degrees. Remember that the chicken will continue to cook even after you remove from oven.
Cook in a roasting pan.
